- 2 tsp baking powder

- 3 large eggs (room temperature)
- β cup unsweetened almond milk
- ΒΌ cup melted butter
- 1 tsp apple cider vinegar
- 1 tbsp powdered erythritol (optional, for slight sweetness)

- Preheat oven to 350Β°F (175Β°C). Line a baking sheet with parchment paper.
- In a bowl, mix almond flour, coconut flour, baking powder, and salt.
- In another bowl, whisk eggs, melted butter, almond milk, vinegar, and sweetener.
- Combine wet and dry ingredients until a soft dough forms. Let rest 5 minutes (coconut flour absorbs moisture).
- Scoop into 9 equal balls and place on baking sheet.
- Slightly flatten the tops and brush with melted butter.
- Bake 18β22 minutes until golden.
- Brush again with butter right after baking for extra softness.
