Slow Cooker Cream Cheese Crack Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet (1 oz) ranch seasoning mix
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 6-8 slices cooked bacon, crumbled
  • 2 green onions, chopped (optional)

Instructions:

  1. Prepare the Chicken:
    • Place the chicken breasts in the slow cooker.
  2. Add Seasoning and Cream Cheese:
    • Sprinkle the ranch seasoning mix evenly over the chicken.
    • Place the cubed cream cheese on top of the chicken.
  3. Cook:
    • Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours, until the chicken is tender and cooked through.
  4. Shred the Chicken:
    • Once the chicken is cooked, use two forks to shred it directly in the slow cooker.
  5. Add Cheddar Cheese and Bacon:
    • Add the shredded cheddar cheese and crumbled bacon to the shredded chicken. Stir until well combined.
  6. Heat Through:
    • Cover the slow cooker and cook for an additional 10-15 minutes, until the cheese is melted and everything is heated through.
  7. Garnish and Serve:
    • Sprinkle with chopped green onions if desired. Serve the crack chicken over rice, pasta, or as a filling for sandwiches or wraps.
