Skinny Creamy Broccoli Salad

Ingredients:

  • For the Salad:
    • 4 cups fresh broccoli florets (chopped into bite-sized pieces)
    • 1/2 cup red onion (finely diced)
    • 1/2 cup shredded carrots
    • 1/2 cup raisins or dried cranberries
    • 1/4 cup sunflower seeds or chopped almonds
    • 1/2 cup cooked and crumbled turkey bacon (optional)
  • For the Dressing:
    • 1/2 cup non-fat Greek yogurt
    • 2 tablespoons light mayonnaise
    • 1 tablespoon apple cider vinegar (or lemon juice)
    • 1-2 teaspoons honey (to taste)
    • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:
    • In a large bowl, combine the broccoli, red onion, shredded carrots, raisins, and sunflower seeds (or almonds). If using turkey bacon, add it in now as well.
  2. Make the Dressing:
    • In a small bowl, whisk together the Greek yogurt, light mayonnaise, apple cider vinegar (or lemon juice), honey, salt, and pepper until smooth and well combined.
  3. Toss the Salad:
    • Pour the dressing over the salad and toss until the broccoli mixture is evenly coated.
  4. Chill:
    • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Tips:

  • You can substitute dried cranberries for raisins if you prefer.
  • Add a little extra crunch with chopped nuts or seeds.
  • For a sweeter salad, increase the amount of honey in the dressing.
