Skinny Creamy Broccoli Salad

Ingredients:
- For the Salad:
- 4 cups fresh broccoli florets (chopped into bite-sized pieces)
- 1/2 cup red onion (finely diced)
- 1/2 cup shredded carrots
- 1/2 cup raisins or dried cranberries
- 1/4 cup sunflower seeds or chopped almonds
- 1/2 cup cooked and crumbled turkey bacon (optional)
- For the Dressing:
- 1/2 cup non-fat Greek yogurt
- 2 tablespoons light mayonnaise
- 1 tablespoon apple cider vinegar (or lemon juice)
- 1-2 teaspoons honey (to taste)
- Salt and pepper to taste
Instructions:
- Prepare the Salad:
- In a large bowl, combine the broccoli, red onion, shredded carrots, raisins, and sunflower seeds (or almonds). If using turkey bacon, add it in now as well.
- Make the Dressing:
- In a small bowl, whisk together the Greek yogurt, light mayonnaise, apple cider vinegar (or lemon juice), honey, salt, and pepper until smooth and well combined.
- Toss the Salad:
- Pour the dressing over the salad and toss until the broccoli mixture is evenly coated.
- Chill:
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
Tips:
- You can substitute dried cranberries for raisins if you prefer.
- Add a little extra crunch with chopped nuts or seeds.
- For a sweeter salad, increase the amount of honey in the dressing.
