Skinny Banana Bread or Muffins

Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup non-fat Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a loaf pan or muffin tin, or line with paper liners.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, combine mashed bananas, applesauce, honey or maple syrup, Greek yogurt, egg, and vanilla extract. Mix until well combined.
  3. Combine Dry Ingredients:
    • In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. If using, fold in chopped nuts or chocolate chips.
  5. Fill Pan or Muffin Cups:
    • Pour the batter into the prepared loaf pan or fill the muffin cups about two-thirds full.
  6. Bake:
    • For a loaf, bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. For muffins, bake for 18-22 minutes.
  7. Cool:
    • Allow the banana bread or muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  8. Slice or Serve:
    • Once cooled, slice the banana bread or serve the muffins. Enjoy!
