Skinny Banana Bread or Muffins
Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/4 cup non-fat Greek yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Grease a loaf pan or muffin tin, or line with paper liners.
- Mix Wet Ingredients:
- In a large mixing bowl, combine mashed bananas, applesauce, honey or maple syrup, Greek yogurt, egg, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, salt, and cinnamon (if using).
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. If using, fold in chopped nuts or chocolate chips.
- Fill Pan or Muffin Cups:
- Pour the batter into the prepared loaf pan or fill the muffin cups about two-thirds full.
- Bake:
- For a loaf, bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. For muffins, bake for 18-22 minutes.
- Cool:
- Allow the banana bread or muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Slice or Serve:
- Once cooled, slice the banana bread or serve the muffins. Enjoy!
