Here’s a simple and delicious air fryer fried rice recipe:
Ingredients
– 2 cups cooked rice (preferably day-old or cooled)
– 2 tablespoons vegetable oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1/2 cup frozen peas and carrots
– 2 eggs, beaten
– 2-3 tablespoons soy sauce
– 1 teaspoon sesame oil
– 2 green onions, thinly sliced
– Optional: 1/2 cup diced cooked chicken, shrimp, or tofu
Instructions
1. Preheat your air fryer to 370°F (188°C).
2. In a large bowl, combine the cooked rice with 1 tablespoon of vegetable oil and toss to coat.
3. Spread the rice in the air fryer basket and cook for 5 minutes, shaking halfway through. This helps dry out the rice and create some crispy texture.
4. While the rice is cooking, heat the remaining oil in a skillet over medium heat. Add onions and garlic, cook until fragrant (about 1-2 minutes).
5. Push the vegetables to one side and pour in the beaten eggs. Scramble until just set.
6. Remove the rice from the air fryer and add it to the skillet. Add frozen peas and carrots, soy sauce, and any protein if using.
7. Mix everything well and return the mixture to the air fryer basket.
8. Cook for another 3-4 minutes at 370°F until everything is heated through and slightly crispy.
