Zucchini noodles (zoodles) or shirataki noodles, as needed
Instructions:
Prepare Shrimp: Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Cook Shrimp: Heat 2 tbsp butter and 1 tbsp olive oil in a large skillet over medium heat. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp and set aside.
Make the Sauce: In the same skillet, add the remaining butter and olive oil. Add minced garlic and cook until fragrant (about 30 seconds).
Add Liquids: Stir in broth and lemon juice. Let it simmer for 2-3 minutes to reduce slightly. Add red pepper flakes if desired.
Combine: Return the shrimp to the skillet. Toss to coat in the sauce and heat through (about 1 minute).
Serve: Place the shrimp and sauce over a bed of zoodles or shirataki noodles. Sprinkle with fresh parsley and serve immediately.
