🦐 Shrimp and Avocado Bowls with Mango Salsa & Lime Chili Sauce
🔥 For the Shrimp:
- 1 lb (450g) raw shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- Juice of 1/2 lime
🥭 For the Mango Salsa:
- 1 ripe mango, diced
- 1/2 small red onion, finely chopped
- 1 small red bell pepper, diced
- 1 jalapeño, finely chopped (seeds removed for less heat)
- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
- Pinch of salt
🥑 For the Bowl Base:
- 2 cups cooked rice, quinoa, or cauliflower rice
- 1–2 ripe avocados, sliced or cubed
- 1 cup shredded lettuce, spinach, or mixed greens (optional)
- Optional: black beans, corn, cherry tomatoes, pickled onions
🌶️ For the Lime Chili Sauce:
- 3 tbsp Greek yogurt or mayonnaise
- 1 tbsp lime juice
- 1 tsp honey or maple syrup
- 1/2 tsp chili powder
- 1/4 tsp hot sauce (optional, for heat)
- Pinch of salt
