Scones in my air fryer by Tracy

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/2 cup milk (plus extra for brushing)
  • 1 egg
  • 1 tsp vanilla extract
  • Optional: 1/2 cup add-ins (chocolate chips, dried fruit, blueberries)

Directions:

  1. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Cut in the butter: Add cubed cold butter and use a pastry cutter or your fingers to work it into the flour until crumbly.
  3. Add wet ingredients: In a small bowl, whisk together milk, egg, and vanilla. Add to dry ingredients and gently mix until just combined. Fold in any add-ins if using.
  4. Shape: Turn dough onto a lightly floured surface. Pat into a circle about 3/4–1 inch thick. Cut into 6–8 wedges or use a round cutter for traditional scones.
  5. Preheat air fryer: 350°F (175°C) for 3 minutes.
  6. Air fry: Place scones in the air fryer basket (use parchment if desired), leaving a little space between each. Brush tops with milk for a nice golden finish.
  7. Cook: Air fry at 350°F (175°C) for 10–12 minutes, or until golden brown and cooked through.
  8. Cool and serve: Let cool a few minutes. Serve warm with butter, jam, or clotted cream!
