Sausage Mushroom Puffs 


1 roll puff pastry (rectangular)3 ounces sausages (90 g)3 ounces mushrooms (frozen 90 g)3.5 ounces cheese (fontina or mozzarella 100 g)1 egg2 tablespoons parmesan cheese (grated 25 g)q.s. salt1 clove garlic2 tablespoons extra-virgin olive oil


First, prepare the stuffing.
For the sauteed mushrooms have a look at my recipe here.
Meanwhile mushrooms are cooking, cut sausage into 1”-thick slices, and saute in a large pan with extra-virgin olive oil. Cook for 5 minutes, add sauteed mushrooms and season with salt and pepper to taste.

Preheat oven to 375°F (190° C)

Roll out the puff pastry and spread it out on a work surface with its parchment paper. Cut into four rectangles

Cut cheese into cubes and add it to the mushroom and sausage mixture, together with the grated Parmesan cheese; mix well with a spoon.

Place the stuffing on each rectangle, using a spoon and then close, folding the dough over the filling and sealing well the edges with a fork.

Transfer the bundles to a baking tray covered with parchment paper, brush with beaten egg

and cook for about 15 minutes or until golden brown. Remove from the oven and serve hot.
