Roasted Sausage and Potatoes
Ingredients:
- 1 pound of your favorite sausage (Italian, bratwurst, or any other type you prefer)
- 1.5 pounds of potatoes (red or Yukon gold potatoes work well)
- 1 onion, sliced
- 2-3 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes. Cut them into bite-sized chunks. You can peel them if you prefer, but leaving the skins on adds extra flavor and texture.
- In a large bowl, combine the potato chunks, sliced onion, minced garlic, dried thyme, dried rosemary, salt, pepper, and olive oil. Toss everything together until the potatoes are well coated with the oil and seasonings.
- Cut the sausage into bite-sized pieces.
- Add the sausage pieces to the bowl with the potatoes and toss everything together until the sausage is evenly distributed.
- Spread the sausage and potato mixture out onto a large baking sheet in a single layer. Make sure everything is evenly spaced to allow for even cooking.
- Roast in the preheated oven for about 30-35 minutes, or until the potatoes are tender and golden brown, and the sausage is cooked through. You may want to stir the mixture halfway through cooking to ensure even browning.
- Once done, remove from the oven and garnish with fresh parsley if desired. Serve hot and enjoy!…
