Roasted Sausage and Potatoes

Ingredients:
- 4 large potatoes, washed and diced into cubes
- 1 lb (450g) sausage links (your choice of flavor)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish

Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper until evenly coated.
- Spread the seasoned potatoes on a baking sheet lined with parchment paper or aluminum foil.
- Place the sausage links on top of the potatoes.
- Scatter the diced onion over the sausage and potatoes.
- Roast in the preheated oven for about 25-30 minutes or until the potatoes are tender and golden brown, and the sausage is cooked through.
- Once done, remove from the oven and let it cool for a few minutes before serving.
- Garnish with chopped fresh parsley if desired, and serve hot.
