Roasted Sausage and Potatoes

Ingredients:

  • 4 large potatoes, washed and diced into cubes
  • 1 lb (450g) sausage links (your choice of flavor)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: chopped fresh parsley for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes on a baking sheet lined with parchment paper or aluminum foil.
  4. Place the sausage links on top of the potatoes.
  5. Scatter the diced onion over the sausage and potatoes.
  6. Roast in the preheated oven for about 25-30 minutes or until the potatoes are tender and golden brown, and the sausage is cooked through.
  7. Once done, remove from the oven and let it cool for a few minutes before serving.
  8. Garnish with chopped fresh parsley if desired, and serve hot.
