Reuben Bake Recipe

Ingredients:

  • 1 loaf of rye bread (about 16 slices), cut into 1-inch cubes
  • 2 cups shredded Swiss cheese
  • 1 pound deli corned beef, chopped
  • 1 cup sauerkraut, drained
  • 1 cup thousand island or Russian dressing
  • 4 large eggs
  • 2 cups milk
  • 1/2 teaspoon caraway seeds (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Bread and Meat: Place the rye bread cubes in a greased 9×13-inch baking dish. Sprinkle half of the shredded Swiss cheese over the bread cubes. Top with chopped corned beef and sauerkraut.
  3. Mix Dressing: In a medium bowl, combine the thousand island or Russian dressing with the remaining Swiss cheese. Pour this mixture evenly over the bread, meat, and sauerkraut.
  4. Prepare Egg Mixture: In a separate bowl, whisk together the eggs, milk, caraway seeds (if using), salt, and pepper. Pour this mixture over the layers in the baking dish, making sure everything is well soaked.
  5. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the egg mixture is set.
  6. Serve: Let it cool for a few minutes before serving. Enjoy your Reuben bake!
