Ingredients
Lemon Pudding Layer
- 1 bottle vanilla protein shake i used 14 oz fairlife
- 1 box sugar-free instant lemon pudding mix 1oz
Yogurt Layer
- 538 g vanilla Greek yogurt Oikos Triple Zero used
- 1 small box sugar-free instant pudding mix 1 oz, cheesecake or vanilla
Instructions
- Whisk protein shake with lemon pudding mix. Let thicken. Optional: Use immersion blender to make silky smooth.
- Mix yogurt with pudding mix until fully combined.
- Layer yogurt and lemon pudding into containers.
Notes
*This dessert makes a larger layer of lemon pudding than what’s shown in the photos. I had a ton left over that wouldn’t fit 😊
Fluffy Yogurt Notes & Taste Disclaimer
TART VS SWEET YOGURT: Plain Greek yogurt can make the mix taste tart. Some people love that; a lot of people don’t. I usually recommend a sweetened, low-calorie vanilla yogurt that isn’t super tangy (like Oikos Triple Zero vanilla).
PUDDING MIX OPTION: You can swap sugar free pudding mix for regular pudding mix if you prefer less artificial sweetener taste. Macros will change, but the texture still turns out thick.
NEXT-DAY FLAVOR: I think fluffy yogurt tastes way better the next day. The first bite can taste a little “chemical,” especially with sugar free pudding mix, but after chilling overnight the flavor mellows and gets really good.
SINGLE-SERVING TIP: You don’t have to make a huge batch—feel free to scale it down and make a single serving so you’re not committing a full container of yogurt to a new flavor combo. A good single-serving base is about 170 g yogurt mixed with 11 g pudding mix.
TEXTURE & THICKNESS: Using a small box of pudding mix gives a milder flavor and a looser, softer texture. Using a family-size box (about 1.5x a small box) makes it richer in flavor and thicker, almost like frosting. For flavors like chocolate, I usually go heavier on the pudding mix.
