Diabetic-Friendly French Onion Soup
Ingredients
- 3 large yellow onions, thinly sliced
- 1 tbsp olive oil
- 1 tbsp butter (optional for flavor)
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth or vegetable broth
- ½ tsp thyme (fresh or dried)
- ½ tsp black pepper
- Salt to taste
- 2 slices low-carb or whole-grain bread, toasted
- ¼–½ cup grated Gruyère or Swiss cheese
Instructions
- Caramelize onions
- Heat olive oil and butter in a pot over medium heat.
- Add sliced onions and cook 20–25 minutes, stirring occasionally until soft and golden.
- Add garlic
- Stir in garlic and cook 1 minute.
- Add broth
- Pour in broth, add thyme, pepper, and salt.
- Simmer 10–15 minutes.
- Prepare bowls
- Pour soup into oven-safe bowls.
- Place a small piece of toasted low-carb bread on top.
- Add cheese
- Sprinkle grated cheese over the bread.
- Broil
- Place under the broiler 2–3 minutes until cheese melts and bubbles.
