Diabetic-Friendly French Onion Soup

Ingredients

  • 3 large yellow onions, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp butter (optional for flavor)
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth or vegetable broth
  • ½ tsp thyme (fresh or dried)
  • ½ tsp black pepper
  • Salt to taste
  • 2 slices low-carb or whole-grain bread, toasted
  • ¼–½ cup grated Gruyère or Swiss cheese

Instructions

  1. Caramelize onions
    • Heat olive oil and butter in a pot over medium heat.
    • Add sliced onions and cook 20–25 minutes, stirring occasionally until soft and golden.
  2. Add garlic
    • Stir in garlic and cook 1 minute.
  3. Add broth
    • Pour in broth, add thyme, pepper, and salt.
    • Simmer 10–15 minutes.
  4. Prepare bowls
    • Pour soup into oven-safe bowls.
    • Place a small piece of toasted low-carb bread on top.
  5. Add cheese
    • Sprinkle grated cheese over the bread.
  6. Broil
    • Place under the broiler 2–3 minutes until cheese melts and bubbles.
