potato salad

It’s officially potato salad season! I made this delicious, high protein potato salad today and I’m going to be eating it ALL through summer I think.
I used canned potatoes (a nutritious and budget friendly kitchen staple) but you could boil potatoes and then I mixed them with boiled eggs and butter beans for extra protein and then mixed in Greek yogurt (instead of mayo) and some fresh dill, green onions (spring onions), lemon juice and salt and pepper.
It’s SO good and it keeps in the fridge for a few days so it’s good for meal prep.
