Poor Mans Prime Rib

Ingredients

  • 2 lbs chuck roast (choose a well-marbled piece)
  • 2 tbsp olive oil (or avocado oil)
  • 2 tbsp unsalted butter
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp Dijon mustard (optional for extra flavor)

Instructions

1. Prepare the Meat

  • Take the chuck roast out of the fridge 30 minutes before cooking to bring it to room temperature.
  • Pat it dry with paper towels. Rub the roast generously with olive oil, salt, and pepper.

2. Seasoning

  • Mix the garlic powder, onion powder, rosemary, and thyme together. Rub the seasoning blend all over the meat.

3. Sear the Meat

  • Preheat a large oven-safe skillet (cast iron works best) over medium-high heat.
  • Add butter to the skillet and sear the roast on all sides until a golden-brown crust forms (about 2–3 minutes per side).

4. Slow Roast

  • Preheat your oven to 275°F (135°C).
  • Transfer the skillet with the roast into the oven. Alternatively, place the seared roast in a roasting pan.
  • Roast for 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy.

5. Rest and Serve

  • Remove the roast from the oven, tent it loosely with aluminum foil, and let it rest for 15 minutes.
  • Slice thinly against the grain and serve.
