Poor Mans Prime Rib
Ingredients
- 2 lbs chuck roast (choose a well-marbled piece)
- 2 tbsp olive oil (or avocado oil)
- 2 tbsp unsalted butter
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp Dijon mustard (optional for extra flavor)
Instructions
1. Prepare the Meat
- Take the chuck roast out of the fridge 30 minutes before cooking to bring it to room temperature.
- Pat it dry with paper towels. Rub the roast generously with olive oil, salt, and pepper.
2. Seasoning
- Mix the garlic powder, onion powder, rosemary, and thyme together. Rub the seasoning blend all over the meat.
3. Sear the Meat
- Preheat a large oven-safe skillet (cast iron works best) over medium-high heat.
- Add butter to the skillet and sear the roast on all sides until a golden-brown crust forms (about 2–3 minutes per side).
4. Slow Roast
- Preheat your oven to 275°F (135°C).
- Transfer the skillet with the roast into the oven. Alternatively, place the seared roast in a roasting pan.
- Roast for 1.5 to 2 hours or until the internal temperature reaches 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy.
5. Rest and Serve
- Remove the roast from the oven, tent it loosely with aluminum foil, and let it rest for 15 minutes.
- Slice thinly against the grain and serve.
