Please STOP boiling potatoes in WATER

Ingredients

  • 1 large head of cauliflower (or 2 medium turnips), cut into florets/chunks
  • 2 tbsp olive oil or butter
  • 1 tsp garlic powder
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 2 tbsp heavy cream (optional, for extra creaminess)
  • Fresh herbs for garnish (parsley or chives)

Instructions

  1. Steam instead of boil:
    • Place cauliflower (or turnips) in a steamer basket over boiling water.
    • Cover and steam until fork-tender — about 7–10 minutes for cauliflower or 15 minutes for turnips.
    • Steaming keeps flavor in the veg instead of washing it away.
  2. Season & mash:
    • Transfer to a bowl, add olive oil or butter, garlic powder, salt, pepper, and heavy cream if using.
    • Mash with a potato masher or blend for a smoother texture.
  3. Serve hot:
    • Garnish with fresh herbs and maybe a sprinkle of parmesan for a “gourmet” touch.

Pro Tip: Roasting your cauliflower or turnips after steaming gives an extra layer of flavor and makes them taste even more like real potatoes.
