Pistachio Overnight Oats
Ingredients
- 1 cup old-fashioned rolled oats
- 2 Tbsps chia seeds
- 1 or 2 tsps matcha powder (to taste)
- 2 Tbsps pistachio butter or any nut butter
- 2 Tbsps raw honey or pure maple syrup
- 1 tsp vanilla extract
- 1/2 cup plain Greek yogurt
- 1 cup milk of choice
Creamy Topping:
- 2 Tbsps plain Greek yogurt
- 2 Tbsps pistachio butter, or any nut butter
- 1 Tbsp raw honey or pure maple syrup
- 2 Tbsps chopped shelled pistachios
Instructions:
In a large mixing bowl combine the oats, chia seeds, and matcha powder to taste. Add in pistachio butter, honey, vanilla, yogurt, and milk. Stir well to combine.
Transfer this mixture evenly into 2 jars or bowls.
In a small bowl whisk together all the ingredients for the topping, except for the chopped pistachios.
Top your oats evenly with the creamy topping and sprinkle with the chopped pistachios.
