  • 1 lb (450g) boneless, skinless chicken breast, diced
  • 1 cup cooked brown rice (or cauliflower rice for fewer points)
  • 1 cup pineapple chunks (in juice, drained)
  • 1/2 cup pineapple juice (from the can)
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce or teriyaki sauce (optional, for added flavor)
  • 1 tsp sesame oil (or cooking spray to reduce points)
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger (or 1/4 tsp ground ginger)
  • 1 red bell pepper, chopped
  • 1/2 small onion, chopped
  • Green onions or sesame seeds for garnish (optional)

🔪 Instructions:

  1. Sauté veggies: Heat sesame oil (or spray) in a large non-stick skillet or wok over medium heat. Add onions and bell peppers, cooking for about 3–4 minutes until softened.
  2. Cook chicken: Add diced chicken, garlic, and ginger. Cook until chicken is browned and cooked through (about 6–8 minutes).
