Ingredients
- 2 cups cauliflower florets (steamed & well-drained)
- 1½ cups shredded mozzarella cheese
- ½ cup ricotta or cream cheese
- ½ cup sugar-free marinara or pizza sauce
- ½ cup sliced pepperoni (turkey or pork)
- ½ tsp Italian seasoning
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Optional toppings: olives, mushrooms, bell peppers (small amounts)
Instructions
- Preheat oven: 375°F (190°C).
- Prep base: Lightly mash the steamed cauliflower (don’t puree).
- Mix: Stir in ricotta/cream cheese, marinara, Italian seasoning, garlic powder, and pepper.
- Assemble: Spread mixture into a greased baking dish.
