Ingredients

  • 2 cups cauliflower florets (steamed & well-drained)
  • 1½ cups shredded mozzarella cheese
  • ½ cup ricotta or cream cheese
  • ½ cup sugar-free marinara or pizza sauce
  • ½ cup sliced pepperoni (turkey or pork)
  • ½ tsp Italian seasoning
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Optional toppings: olives, mushrooms, bell peppers (small amounts)

Instructions

  1. Preheat oven: 375°F (190°C).
  2. Prep base: Lightly mash the steamed cauliflower (don’t puree).
  3. Mix: Stir in ricotta/cream cheese, marinara, Italian seasoning, garlic powder, and pepper.
  4. Assemble: Spread mixture into a greased baking dish.
  5. Top: Add mozzarella, pepperoni, and optional veggies.
  6. Bake: 20–25 minutes until bubbly and lightly browned.
  7. Rest: Let sit 5 minutes before serving.
