Ingredients:

  • 1 cup natural peanut butter (sugar-free, unsweetened)
  • 1/2 cup powdered erythritol or another keto-friendly sweetener (adjust to taste)
  • 1/4 cup coconut flour (for texture)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2-3 tablespoons unsweetened almond milk or heavy cream (to help with consistency)
  • 1/4 cup dark chocolate chips (optional, for dipping, make sure they are sugar-free)

Instructions:

1. Make the Peanut Butter Mixture:

  • In a mixing bowl, combine the peanut butter, sweetener, coconut flour, vanilla extract, and a pinch of salt.
  • Stir everything together until smooth and well-combined. If the mixture feels too dry or stiff, add almond milk or heavy cream, one tablespoon at a time, until it reaches a dough-like consistency.

2. Form the Balls:

  • Once the mixture is well-combined, use your hands or a spoon to scoop out small portions and roll them into balls, about 1 inch in diameter. You should get around 12-15 balls, depending on the size.

3. Coat with Chocolate (Optional):

  • If you’re using chocolate, melt the dark chocolate chips in the microwave or using a double boiler. Stir until smooth.
  • Dip each peanut butter ball into the melted chocolate, coating it evenly. You can also drizzle the chocolate on top or just dip half for a fun presentation.
  • Place the chocolate-coated balls on a parchment-lined baking sheet or plate to set.

4. Chill and Set:

  • Refrigerate the peanut butter balls for at least 30 minutes to firm up and allow the chocolate to set.

5. Serve:

  • Once chilled and set, serve the peanut butter balls and enjoy! Store any leftovers in an airtight container in the fridge for up to a week or freeze for longer storage.

Tips & Variations:

  • Flavor Variations: You can mix in some unsweetened cocoa powder to make chocolate peanut butter balls or add a few drops of stevia or other flavorings like cinnamon or almond extract.
  • Dairy-Free Option: Use dairy-free chocolate chips and coconut cream or almond milk in place of heavy cream.
  • Crunchy Option: Add chopped peanuts, chia seeds, or flaxseeds to the peanut butter mixture for extra texture.
