Oven Baked Cheesy Beef and Potato Casserole

Ingredients:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups russet potatoes, peeled and thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika (optional)
- 2 cups shredded cheddar cheese, divided
- 1 tbsp olive oil or butter
- Chopped parsley, for garnish (optional)

Instructions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook beef mixture:
- In a skillet over medium heat, add olive oil and sauté the onion until translucent.
- Add ground beef and garlic, cook until browned. Drain excess grease.
- Make the sauce:
- In a bowl, mix together the cream of mushroom soup, sour cream, milk, salt, pepper, and paprika.
- Layer the casserole:
- Spread half of the sliced potatoes in the bottom of the prepared dish.
- Top with half of the beef mixture, half of the sauce, and 1 cup of cheddar cheese.
- Repeat the layers: potatoes, beef, sauce, and the remaining 1 cup of cheese.
- Bake:
- Cover with foil and bake for 60 minutes.
- Uncover and bake for an additional 15–20 minutes, until potatoes are tender and the cheese is golden and bubbly.
- Garnish and serve:
- Let rest for 5–10 minutes. Sprinkle with chopped parsley if desired.
