Oven Baked Cheesy Beef and Potato Casserole

Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups russet potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 cups shredded cheddar cheese, divided
  • 1 tbsp olive oil or butter
  • Chopped parsley, for garnish (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook beef mixture:
    • In a skillet over medium heat, add olive oil and sauté the onion until translucent.
    • Add ground beef and garlic, cook until browned. Drain excess grease.
  3. Make the sauce:
    • In a bowl, mix together the cream of mushroom soup, sour cream, milk, salt, pepper, and paprika.
  4. Layer the casserole:
    • Spread half of the sliced potatoes in the bottom of the prepared dish.
    • Top with half of the beef mixture, half of the sauce, and 1 cup of cheddar cheese.
    • Repeat the layers: potatoes, beef, sauce, and the remaining 1 cup of cheese.
  5. Bake:
    • Cover with foil and bake for 60 minutes.
    • Uncover and bake for an additional 15–20 minutes, until potatoes are tender and the cheese is golden and bubbly.
  6. Garnish and serve:
    • Let rest for 5–10 minutes. Sprinkle with chopped parsley if desired.
