Orange Cranberry Banana Bread — Diabetic-Friendly Recipe
🧾 Ingredients
- 1 cup almond flour
- ½ cup oat flour (or whole-wheat flour)
- 2 small ripe Banana, mashed
- ½ cup unsweetened dried Cranberry (or fresh)
- Zest of 1 Orange
- 2 tbsp fresh orange juice
- 2 eggs
- ¼ cup monk fruit or erythritol sweetener
- 3 tbsp olive oil or melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- Optional: 2 tbsp chopped walnuts
🍳 Instructions
- Preheat oven to 175°C / 350°F and line a loaf pan with parchment paper.
- Mix wet ingredients
In a bowl combine mashed bananas, eggs, orange juice, orange zest, sweetener, oil, and vanilla. - Mix dry ingredients
In another bowl combine almond flour, oat flour, baking powder, baking soda, and salt. - Combine batter
Gradually add dry ingredients into the wet mixture. Fold in cranberries and walnuts. - Bake
Pour into the loaf pan and bake 40–45 minutes until a toothpick comes out clean. - Cool before slicing
Let the bread cool for 10–15 minutes.
