Orange Cardamom Olive Oil Cake:

A moist, fragrant cake made with olive oil, orange zest, and freshly ground cardamom. This Mediterranean-inspired dessert is simple, light, and filled with citrus warmth.


Ingredients

1 ½ cups all-purpose flour

1 cup granulated sugar

3 large eggs, room temperature

½ cup extra-virgin olive oil

½ cup fresh orange juice

2 tbsp orange zest (from 2 oranges)

1 tsp ground cardamom

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

Optional: 2 tbsp honey for glaze

Optional: Crushed pistachios or powdered sugar for garnish


Instructions

1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.

2. In a large bowl, whisk eggs and sugar until pale and slightly frothy.

3. Add olive oil and orange juice, whisking until smooth.

4. In another bowl, combine flour, baking powder, baking soda, salt, and ground cardamom.

5. Add dry ingredients to wet mixture and stir until just combined.

6. Fold in orange zest gently.

7. Pour batter into prepared pan and smooth the top.

8. Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.

9. Cool 10 minutes in pan, then transfer to a wire rack.

10. Brush with honey glaze or dust with powdered sugar.

11. Top with pistachios or candied orange slices before serving.

Notes

Use mild, fruity olive oil for the best flavor.

Store covered at room temperature up to 3 days.

Pairs beautifully with Greek yogurt or whipped cream.
