Diabetic-Friendly Orange Cake

🥣 Ingredients

Dry:

  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • Pinch of salt

Wet:

  • 3 eggs
  • ¼ cup fresh orange juice (small amount for flavor)
  • 1 tbsp orange zest (gives strong flavor without sugar)
  • ¼ cup erythritol or monk fruit sweetener
  • ¼ cup unsweetened Greek yogurt
  • 2 tbsp olive oil or melted butter
  • 1 tsp vanilla extract

🔥 Instructions

  1. Preheat oven to 180°C / 350°F.
  2. In a bowl, whisk eggs, sweetener, yogurt, oil, orange juice, zest, and vanilla.
  3. Add almond flour, coconut flour, baking powder, and salt. Mix well.
  4. Pour into a greased or lined cake pan.
  5. Bake for 30–35 minutes until golden and set.
  6. Let cool completely before slicing.

🍊 Optional Sugar-Free Orange Glaze

  • 2 tbsp powdered erythritol
  • 1–2 tsp orange juice
    👉 Mix and drizzle lightly on top.
