Only 2 Points Weight Watchers Soft Lemon Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Cream Butter and Sugar:

  3. Add Wet Ingredients:

  6. Shape Cookies:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake:
    • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. Dust with Powdered Sugar (Optional):
    • Once cooled, you can dust the cookies with powdered sugar for an extra touch of sweetness (optional).
