One Point Churro Pancakes

Ingredients:
For the Pancakes:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon sugar substitute (such as Stevia or another no-calorie sweetener)
- 1/2 teaspoon ground cinnamon
- 1 cup unsweetened almond milk (or any other milk of your choice)
- 1 large egg
- 1 teaspoon vanilla extract
For the Churro Coating:
- 2 tablespoons sugar substitute
- 1 teaspoon ground cinnamon
Instructions:
- Prepare the Pancake Batter:
- In a bowl, whisk together the flour, baking powder, baking soda, salt, sugar substitute, and cinnamon.
- In a separate bowl, whisk together the almond milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Cook the Pancakes:
- Heat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup portions of batter onto the hot surface, spreading them slightly with the back of a spoon. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
- Churro Coating:
- In a shallow dish, mix together the sugar substitute and ground cinnamon for the churro coating.
- Coat the Pancakes:
- While the pancakes are still warm, lightly spray them with cooking spray or brush with a bit of melted butter.
- Dip each pancake into the churro coating, ensuring both sides are covered.
- Serve:
- Serve your one-point churro pancakes warm, optionally garnished with a sprinkle of extra churro coating.
