One Point Churro Pancakes

Ingredients:

For the Pancakes:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon sugar substitute (such as Stevia or another no-calorie sweetener)
  • 1/2 teaspoon ground cinnamon
  • 1 cup unsweetened almond milk (or any other milk of your choice)
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Churro Coating:

  • 2 tablespoons sugar substitute
  • 1 teaspoon ground cinnamon

Instructions:

  1. Prepare the Pancake Batter:
    • In a bowl, whisk together the flour, baking powder, baking soda, salt, sugar substitute, and cinnamon.
    • In a separate bowl, whisk together the almond milk, egg, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat.
    • Pour 1/4 cup portions of batter onto the hot surface, spreading them slightly with the back of a spoon. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  3. Churro Coating:
    • In a shallow dish, mix together the sugar substitute and ground cinnamon for the churro coating.
  4. Coat the Pancakes:
    • While the pancakes are still warm, lightly spray them with cooking spray or brush with a bit of melted butter.
    • Dip each pancake into the churro coating, ensuring both sides are covered.
  5. Serve:
    • Serve your one-point churro pancakes warm, optionally garnished with a sprinkle of extra churro coating.
