One Bowl Fudgy Cocoa Brownies

Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup unsweetened cocoa powder
- 3/4 cup granulated erythritol (or your preferred keto sweetener)
- 3 large eggs
- 1 tsp vanilla extract
- 1/4 cup almond flour
- 1/4 tsp salt
- 1/2 tsp baking powder (optional, for a little lift)
- 1/4 cup sugar-free chocolate chips (optional, for extra fudginess)
Instructions:
- Preheat & Prep:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly. - Melt Butter & Mix Cocoa:
In a large microwave-safe bowl, melt the butter. Once melted, whisk in the cocoa powder until smooth. - Add Sweetener & Eggs:
Stir in the erythritol until well combined. Then, add the eggs one at a time, whisking after each. Mix in the vanilla extract. - Fold in Dry Ingredients:
Add the almond flour, salt, and baking powder (if using). Stir until the batter is smooth and well mixed. If you’re adding chocolate chips, fold them in now. - Bake:
Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. - Cool & Serve:
Let the brownies cool completely in the pan before cutting into squares. Enjoy the fudgy goodness!

For an even richer flavor, sprinkle a little sea salt on top after baking!
