Ingredients

  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon apple cider vinegar

Step 1: Activate Yeast

  1. In a small bowl, combine warm water, yeast, and sweetener.
  2. Let sit for 5–10 minutes until foamy.

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk together almond flour, coconut flour, psyllium husk, and salt.

Step 3: Combine & Knead

  1. Add yeast mixture, olive oil, and vinegar to dry ingredients.
  2. Mix until a soft, slightly sticky dough forms.
  3. Let rest 5 minutes for psyllium to absorb moisture.

Step 4: Shape Rolls

  1. Divide dough into 8–10 equal portions.
  2. Shape into balls and place on a parchment-lined baking sheet.
  3. Cover with a towel and let rise 30–45 minutes in a warm place.

Step 5: Bake

  1. Preheat oven to 180°C (350°F).
  2. Optional: brush rolls with egg wash and sprinkle sesame or poppy seeds.
  3. Bake 20–25 minutes until golden brown.
  4. Cool on a wire rack before serving.
