Step 1: Activate Yeast
- In a small bowl, combine warm water, yeast, and sweetener.
- Let sit for 5–10 minutes until foamy.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk together almond flour, coconut flour, psyllium husk, and salt.
Step 3: Combine & Knead
- Add yeast mixture, olive oil, and vinegar to dry ingredients.
- Mix until a soft, slightly sticky dough forms.
- Let rest 5 minutes for psyllium to absorb moisture.
Step 4: Shape Rolls
- Divide dough into 8–10 equal portions.
- Shape into balls and place on a parchment-lined baking sheet.
- Cover with a towel and let rise 30–45 minutes in a warm place.
Step 5: Bake
- Preheat oven to 180°C (350°F).
- Optional: brush rolls with egg wash and sprinkle sesame or poppy seeds.
- Bake 20–25 minutes until golden brown.
- Cool on a wire rack before serving.
