Oatmeal Banana Bread

Ingredients:
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 2 large eggs
- 1/3 cup melted coconut oil or unsalted butter
- 1/2 cup brown sugar or honey/maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 1 tsp vanilla extract
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour (or whole wheat flour)
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon (optional)
- 1/4 cup chopped nuts or chocolate chips (optional)

Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Mix wet ingredients:
In a large bowl, combine mashed bananas, eggs, melted coconut oil (or butter), brown sugar (or sweetener of choice), milk, and vanilla extract. Mix well. - Add dry ingredients:
Stir in oats, flour, baking soda, baking powder, salt, and cinnamon. Mix until just combined. Fold in nuts or chocolate chips if using. - Pour into loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
