These No-Bake Crunch Bars are the perfect  snack or dessert for those seeking a quick, healthy, and satisfying treat. Made with just one bowl and five ingredients, they are naturally gluten-free, vegan, and dairy-free, with a sugar-free option for those looking to keep things light. Each bar is only 4 Weight Watchers points, making them a delicious, guilt-free indulgence that fits into your health goals.

Ingredients

  • 1 1/2 cups dairy-free or sugar-free  chocolate chips
  • 1/2 cup natural peanut butter (no added sugar or hydrogenated oils)
  • 1 1/2 cups crisp rice cereal
  • 1/2 tsp vanilla extract (optional)
  • Pinch of sea salt (optional)

Instructions

  1. Melt Ingredients Together
    In a large microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second intervals, stirring in between until fully melted and combined. This should take about 1 to 2 minutes.
  2. Add the Crunch
    Stir in the vanilla extract and sea salt if using. Then fold in the crisp rice cereal, making sure it is evenly coated with the chocolate and peanut butter mixture.
  3. Prepare the Pan
    Line an 8×8 inch baking pan with parchment paper or lightly grease it to prevent sticking.
  4. Transfer and Spread
    Pour the mixture into the prepared pan, using a spatula to spread it evenly across the pan.
  5. Chill to Set
    Refrigerate for at least 30 minutes, or until the bars are firm and fully set.
  6. Cut and Serve
    Once set, remove the bars from the pan using the parchment paper. Cut into 12 equal bars. Each bar is 4 Weight Watchers points.
