No-Bake Vegan Cinnamon Rolls
Ingredients:
For the dough:
- 1 cup rolled oats (or oat flour)
- 1/2 cup almond flour
- 2 tbsp maple syrup (or agave)
- 1/2 tsp vanilla extract
- 2–3 tbsp plant-based milk (as needed)
- Pinch of salt
For the filling:
- 2 tbsp almond butter (or any nut/seed butter)
- 1 tbsp maple syrup
- 1 tsp ground cinnamon
- 1 tsp coconut oil (optional, for richness)
For the glaze (optional):
- 2 tbsp vegan cream cheese or coconut yogurt
- 1 tbsp maple syrup
- Splash of plant milk
Instructions:
- Make the dough:
- Blend oats into flour (if using rolled oats).
- In a bowl, mix oat flour, almond flour, salt, maple syrup, vanilla, and plant milk until it forms a dough.
- If it’s too sticky, add a bit more oat flour. If too dry, add a splash of milk.
- Roll out the dough:
- Place the dough between two sheets of parchment paper.
- Roll it out into a rectangle (about 1/4 inch thick).
- Make the filling:
- Mix almond butter, maple syrup, cinnamon, and coconut oil until smooth.
- Spread the filling evenly over the dough.
- Form the rolls:
- Carefully roll up the dough from one end (use the parchment paper to help).
- Chill in the fridge for 15–30 minutes to firm up.
- Slice into rolls.
- Add glaze (optional):
- Mix glaze ingredients until smooth.
- Drizzle over the rolls just before serving.
