No-bake cinnamon rolls

🌀 No-Bake Vegan Cinnamon Rolls

🧾 Ingredients:

For the dough:

  • 1 cup rolled oats (or oat flour)
  • 1/2 cup almond flour
  • 2 tbsp maple syrup (or agave)
  • 1/2 tsp vanilla extract
  • 2–3 tbsp plant-based milk (as needed)
  • Pinch of salt

For the filling:

  • 2 tbsp almond butter (or any nut/seed butter)
  • 1 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp coconut oil (optional, for richness)

For the glaze (optional):

  • 2 tbsp vegan cream cheese or coconut yogurt
  • 1 tbsp maple syrup
  • Splash of plant milk

🥣 Instructions:

  1. Make the dough:
    • Blend oats into flour (if using rolled oats).
    • In a bowl, mix oat flour, almond flour, salt, maple syrup, vanilla, and plant milk until it forms a dough.
    • If it’s too sticky, add a bit more oat flour. If too dry, add a splash of milk.
  2. Roll out the dough:
    • Place the dough between two sheets of parchment paper.
    • Roll it out into a rectangle (about 1/4 inch thick).
  3. Make the filling:
    • Mix almond butter, maple syrup, cinnamon, and coconut oil until smooth.
    • Spread the filling evenly over the dough.
  4. Form the rolls:
    • Carefully roll up the dough from one end (use the parchment paper to help).
    • Chill in the fridge for 15–30 minutes to firm up.
    • Slice into rolls.
  5. Add glaze (optional):
    • Mix glaze ingredients until smooth.
    • Drizzle over the rolls just before serving.
