🔥 Nando’s-Style Chicken with Wedges & Spiced Corn

🍗 Ingredients for the Chicken

Main:

  • 1 whole chicken (spatchcocked or cut into 4 pieces) or use 4 chicken legs/thighs
  • 1 bottle Nando’s Full House sauce (or use your favorite peri-peri sauce)
  • Salt & pepper, to taste
  • 1 lemon, for juice
  • 2 tbsp olive oil

Prep:

  • Wash chicken thoroughly and pat dry.
  • Make deep gashes in the chicken for flavor penetration.

Marinade:

  • 1/2 bottle Nando’s Full House sauce
  • Juice of 1 lemon
  • 1 tbsp olive oil
  • Optional: 1 tsp smoked paprika or chili flakes for extra heat
  • Salt to taste

🧂 Method for the Chicken

  1. Marinate:
    • Combine marinade ingredients and rub all over the chicken, making sure it gets into the gashes.
    • Cover and refrigerate for 30 mins – overnight for best flavor.
  2. Cook:
    • Oven: Preheat to 200°C (390°F). Bake chicken on a tray or rack for 35–45 minutes, basting with remaining sauce halfway through.
    • Grill: Preheat grill, cook on medium-high heat for 6–8 minutes per side, until nicely charred and fully cooked inside (internal temp 75°C / 165°F).
    • Optionally brush with extra Nando’s sauce before serving.

🥔 Crispy Potato Wedges

Ingredients:

  • 4 medium potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste

Method:

  1. Preheat oven to 200°C (390°F).
  2. Toss wedges with oil and spices.
  3. Bake for 30–35 minutes, flipping halfway, until golden and crisp.

🌽 Spiced Corn on the Cob

Ingredients:

  • 4 corn cobs, halved
  • 2 tbsp butter (melted)
  • 1 tsp paprika or peri-peri spice
  • Salt, to taste
  • Fresh lime or lemon wedges for serving

Method:

  1. Boil or grill corn until tender (5–10 mins).
  2. Brush with melted butter mixed with spices.
  3. Char on grill or under broiler for smoky flavor.
  4. Squeeze with fresh lime before serving.

🧄 Optional Garlic Dip (like Nando’s style):

  • 1/2 cup mayo
  • 1 tbsp garlic paste
  • 1 tsp lemon juice
  • 1 tsp Nando’s sauce or peri-peri sauce (optional)

Mix and chill.
