My Mom’s Fudge

Ingredients:

  • 1 cup unsweetened peanut butter (or almond butter)
  • ½ cup unsalted butter (melted)
  • ⅓ cup cocoa powder
  • ⅓ cup powdered erythritol (or preferred keto sweetener)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ cup chopped nuts (optional)

Instructions:

  1. Melt & Mix: In a mixing bowl, whisk together the melted butter, peanut butter, cocoa powder, erythritol, vanilla, and salt until smooth.
  2. Pour & Set: Line a small baking dish with parchment paper and pour the mixture in. Smooth it out evenly.
  3. Chill: Refrigerate for at least 1 hour (or freeze for 30 minutes) until firm.
  4. Slice & Enjoy: Cut into squares and enjoy your rich, keto-friendly fudge!
