My Mom’s Fudge
Ingredients:
- 1 cup unsweetened peanut butter (or almond butter)
- ½ cup unsalted butter (melted)
- ⅓ cup cocoa powder
- ⅓ cup powdered erythritol (or preferred keto sweetener)
- 1 tsp vanilla extract
- ¼ tsp sea salt
- ¼ cup chopped nuts (optional)
Instructions:
- Melt & Mix: In a mixing bowl, whisk together the melted butter, peanut butter, cocoa powder, erythritol, vanilla, and salt until smooth.
- Pour & Set: Line a small baking dish with parchment paper and pour the mixture in. Smooth it out evenly.
- Chill: Refrigerate for at least 1 hour (or freeze for 30 minutes) until firm.
- Slice & Enjoy: Cut into squares and enjoy your rich, keto-friendly fudge!
