Muffin Hawaiian Pizza Recipe.

Ingredients:
For the Muffin Base:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1 large egg
For the Pizza Toppings:
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup diced cooked ham
- 1/2 cup pineapple tidbits, drained
- 1/4 cup sliced green bell pepper
- 1/4 cup sliced red onion
Optional Garnish:
- Fresh basil leaves, chopped
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
2. Prepare the Muffin Base:
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, melted butter, and egg.
- Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
3. Assemble the Muffins:
- Spoon a tablespoon of batter into each muffin cup, spreading it to cover the bottom.
- Add a teaspoon of pizza sauce on top of the batter in each cup.
- Sprinkle a layer of shredded mozzarella cheese over the sauce.
- Add diced ham, pineapple tidbits, sliced green bell pepper, and red onion to each cup.
4. Add Another Layer:
- Spoon another tablespoon of batter over the toppings in each cup, covering them.
5. Bake:
- Bake in the preheated oven for 15-18 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
6. Garnish and Serve:
- Allow the muffins to cool for a few minutes before removing them from the tin.
- Garnish with chopped fresh basil, if desired.
