Muffin Hawaiian Pizza Recipe.

Ingredients:

For the Muffin Base:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 large egg

For the Pizza Toppings:

  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced cooked ham
  • 1/2 cup pineapple tidbits, drained
  • 1/4 cup sliced green bell pepper
  • 1/4 cup sliced red onion

Optional Garnish:

  • Fresh basil leaves, chopped

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

2. Prepare the Muffin Base:

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the buttermilk, melted butter, and egg.
  • Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

3. Assemble the Muffins:

  • Spoon a tablespoon of batter into each muffin cup, spreading it to cover the bottom.
  • Add a teaspoon of pizza sauce on top of the batter in each cup.
  • Sprinkle a layer of shredded mozzarella cheese over the sauce.
  • Add diced ham, pineapple tidbits, sliced green bell pepper, and red onion to each cup.

4. Add Another Layer:

  • Spoon another tablespoon of batter over the toppings in each cup, covering them.

5. Bake:

  • Bake in the preheated oven for 15-18 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

6. Garnish and Serve:

  • Allow the muffins to cool for a few minutes before removing them from the tin.
  • Garnish with chopped fresh basil, if desired.
  • Serve warm and enjoy your Muffin Hawaiian Pizza!
