MONTEREY SAUSAGE PIE

Ingredients:

  • For the crust:
    • 1 ½ cups all-purpose flour
    • ½ teaspoon salt
    • ½ cup unsalted butter (cold, cut into small cubes)
    • 2-3 tablespoons cold water
  • For the filling:
    • 1 pound (450g) Italian sausage (bulk, not in casings)
    • 1 medium onion, finely chopped
    • 1 bell pepper (red or green), diced
    • 2 cloves garlic, minced
    • 1 cup frozen corn (thawed) or fresh corn kernels
    • 1 cup shredded Monterey Jack cheese
    • ½ cup grated Parmesan cheese
    • 4 large eggs
    • 1 cup milk
    • 1 teaspoon dried oregano
    • ½ teaspoon dried basil
    • Salt and black pepper to taste
    • 1 tablespoon olive oil (for cooking)

Instructions:

  1. Prepare the Crust:
    1. In a mixing bowl, combine flour and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    2. Gradually add cold water, 1 tablespoon at a time, until the dough comes together.
    3. Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  2. Prepare the Filling:
    1. Preheat your oven to 375°F (190°C).
    2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks. Remove from the skillet and set aside.
    3. In the same skillet, add onion and bell pepper. Cook until softened, about 5 minutes. Add garlic and cook for another minute.
    4. Return the sausage to the skillet and mix in the corn. Remove from heat and let it cool slightly.
  3. Assemble the Pie:
    1. Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish, pressing it into the sides and trimming any excess.
    2. Sprinkle the shredded Monterey Jack cheese evenly over the bottom of the crust.
    3. Spoon the sausage and vegetable mixture over the cheese.
    4. In a medium bowl, whisk together the eggs, milk, oregano, basil, salt, and pepper. Pour the egg mixture over the sausage filling.
    5. Sprinkle the grated Parmesan cheese on top.
  4. Bake the Pie:
    1. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
    2. Let the pie cool for a few minutes before slicing and serving.
