MONTEREY SAUSAGE PIE
Ingredients:
- For the crust:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter (cold, cut into small cubes)
- 2-3 tablespoons cold water
- For the filling:
- 1 pound (450g) Italian sausage (bulk, not in casings)
- 1 medium onion, finely chopped
- 1 bell pepper (red or green), diced
- 2 cloves garlic, minced
- 1 cup frozen corn (thawed) or fresh corn kernels
- 1 cup shredded Monterey Jack cheese
- ½ cup grated Parmesan cheese
- 4 large eggs
- 1 cup milk
- 1 teaspoon dried oregano
- ½ teaspoon dried basil
- Salt and black pepper to taste
- 1 tablespoon olive oil (for cooking)

Instructions:
- Prepare the Crust:
- In a mixing bowl, combine flour and salt. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Gradually add cold water, 1 tablespoon at a time, until the dough comes together.
- Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Prepare the Filling:
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned and cooked through, breaking it up with a spoon as it cooks. Remove from the skillet and set aside.
- In the same skillet, add onion and bell pepper. Cook until softened, about 5 minutes. Add garlic and cook for another minute.
- Return the sausage to the skillet and mix in the corn. Remove from heat and let it cool slightly.
- Assemble the Pie:
- Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the dish, pressing it into the sides and trimming any excess.
- Sprinkle the shredded Monterey Jack cheese evenly over the bottom of the crust.
- Spoon the sausage and vegetable mixture over the cheese.
- In a medium bowl, whisk together the eggs, milk, oregano, basil, salt, and pepper. Pour the egg mixture over the sausage filling.
- Sprinkle the grated Parmesan cheese on top.
- Bake the Pie:
- Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
- Let the pie cool for a few minutes before slicing and serving.
