Mocha espresso brownie bites
Ingredients:
– 1/2 cup unsalted butter, melted
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/4 cup brewed espresso or strong coffee
– 1/3 cup cocoa powder
– 1/2 cup all-purpose flour
– 1/4 teaspoon salt
– 1/2 cup chocolate chips
– 1/4 cup chopped walnuts or pecans (optional)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini paper liners.
2. In a large mixing bowl, combine the melted butter and granulated sugar. Whisk together until the mixture is smooth and creamy.
3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and brewed espresso until fully incorporated.
4. Sift in the cocoa powder, all-purpose flour, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
5. Fold in the chocolate chips and, if using, the chopped walnuts or pecans.
6. Spoon the batter into the prepared mini muffin tin, filling each cup about three-quarters full.
7. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
8. Allow the brownie bites to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
