Mini pumpkin muffins

Preheat oven to 350

Mix one can of pumpkin (15 oz)

11/2 cups of Kodiak buttermilk pancake and waffle mix

2 eggs, 1 teaspoon of baking soda, 1 teaspoon baking powder, 1 1/2 teaspoons of cinnamon, 1/2 teaspoon of ginger, 1/2 teaspoon of nutmeg 1/2 cup unsweetened applesauce

3/4 cup Splenda monk fruit.

Mix well.

Bake 20 minutes makes 12 Regular size muffins.
