Ingredients
- 1 medium head of cauliflower (or 4 cups of pre-riced cauliflower)
- 2 tbsp olive oil or avocado oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 medium tomato, diced
- 1/2 cup tomato sauce (sugar-free or low-carb)
- 1 tsp chili powder (adjust to taste)
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- 1/2 tsp salt (or to taste)
- 1/4 tsp ground black pepper
- 1/2 cup chopped bell peppers (optional)
- 1/4 cup chopped fresh cilantro
- Juice of 1/2 lime

Instructions
- Prepare the Cauliflower Rice:
- If using a whole cauliflower, remove the leaves and stems. Break it into florets and pulse in a food processor until it resembles rice.
- Cook the Aromatics:
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes.
- Add minced garlic and sauté for another minute.
- Add Vegetables and Spices:
- Stir in diced tomato, bell peppers (if using), and tomato sauce. Cook for 2-3 minutes, letting the flavors combine.
- Mix in chili powder, cumin, smoked paprika, salt, and pepper.
- Cook the Cauliflower Rice:
- Add the cauliflower rice to the skillet. Stir well to combine with the sauce and spices. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
- Finish with Lime and Cilantro:
- Remove from heat and stir in lime juice and chopped cilantro.
- Serve:
- Enjoy as a side dish with grilled chicken, steak, or as part of a keto-friendly taco bowl!
