Ingredients

  • 1 medium head of cauliflower (or 4 cups of pre-riced cauliflower)
  • 2 tbsp olive oil or avocado oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium tomato, diced
  • 1/2 cup tomato sauce (sugar-free or low-carb)
  • 1 tsp chili powder (adjust to taste)
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp ground black pepper
  • 1/2 cup chopped bell peppers (optional)
  • 1/4 cup chopped fresh cilantro
  • Juice of 1/2 lime

Instructions

  1. Prepare the Cauliflower Rice:
    • If using a whole cauliflower, remove the leaves and stems. Break it into florets and pulse in a food processor until it resembles rice.
  2. Cook the Aromatics:
    • Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes.
    • Add minced garlic and sauté for another minute.
  3. Add Vegetables and Spices:
    • Stir in diced tomato, bell peppers (if using), and tomato sauce. Cook for 2-3 minutes, letting the flavors combine.
    • Mix in chili powder, cumin, smoked paprika, salt, and pepper.
  4. Cook the Cauliflower Rice:
    • Add the cauliflower rice to the skillet. Stir well to combine with the sauce and spices. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.
  5. Finish with Lime and Cilantro:
    • Remove from heat and stir in lime juice and chopped cilantro.
  6. Serve:
    • Enjoy as a side dish with grilled chicken, steak, or as part of a keto-friendly taco bowl!
