 Mediterranean Crispy Parmesan Zucchini Rounds

 Ingredients:
  • 2 medium zucchinis, sliced into 1/4-inch rounds
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup seasoned breadcrumbs (or Panko for extra crunch)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped fresh parsley and lemon zest for garnish
 Instructions:
  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil. Lightly brush or spray with olive oil.
  2. Prepare coating mix: In a small bowl, combine Parmesan, breadcrumbs, oregano, basil, garlic powder, salt, and pepper.
  3. Brush zucchini rounds on both sides with olive oil. Press each round into the Parmesan mixture, coating both sides well. Lay them flat in a single layer on the baking sheet.
  4. Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
  5. Garnish (optional): Sprinkle with chopped parsley and lemon zest before serving.
 Serving Suggestions:
  • Serve with tzatziki, marinara, or hummus.
  • Great alongside grilled chicken or fish.
