Mediterranean Crispy Parmesan Zucchini Rounds

Ingredients:
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 1/2 cup grated Parmesan cheese
- 1/4 cup seasoned breadcrumbs (or Panko for extra crunch)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Optional: chopped fresh parsley and lemon zest for garnish
Instructions:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil. Lightly brush or spray with olive oil.
- Prepare coating mix: In a small bowl, combine Parmesan, breadcrumbs, oregano, basil, garlic powder, salt, and pepper.
- Brush zucchini rounds on both sides with olive oil. Press each round into the Parmesan mixture, coating both sides well. Lay them flat in a single layer on the baking sheet.
- Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
- Garnish (optional): Sprinkle with chopped parsley and lemon zest before serving.
Serving Suggestions:
- Serve with tzatziki, marinara, or hummus.
- Great alongside grilled chicken or fish.
