Mediterranean Chicken Zucchini Bake

Ingredients (Serves 4):
- 2 medium zucchinis, sliced into rounds or half-moons
- 1 lb boneless chicken breast or thighs, cooked and shredded or cubed
- 1 cup cherry tomatoes, halved
- ⅓ cup chopped red onion
- ¼ cup sliced black or Kalamata olives
- ½ cup crumbled feta cheese
- 1 cup shredded mozzarella or Italian blend cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- ½ tsp dried basil
- Salt & pepper to taste
- Optional: fresh parsley or basil for garnish
- Optional: a squeeze of lemon for brightness
🔥 Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Sauté zucchini (optional):
For extra flavor and less moisture, lightly sauté zucchini in olive oil for 3–4 minutes. Set aside. - Mix the bake:
In a large bowl, combine cooked chicken, zucchini, cherry tomatoes, red onion, olives, garlic, olive oil, oregano, basil, salt, and pepper. - Assemble:
Pour the mixture into the baking dish. Top with feta and shredded mozzarella. - Bake:
Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly. - Finish & serve:
Garnish with fresh herbs and a squeeze of lemon if desired. Serve warm.

- Add spinach or artichoke hearts for more Mediterranean flavor.
- Great for leftovers — even better the next day!
