Mediterranean Chicken Zucchini Bake

Ingredients (Serves 4):

  • 2 medium zucchinis, sliced into rounds or half-moons
  • 1 lb boneless chicken breast or thighs, cooked and shredded or cubed
  • 1 cup cherry tomatoes, halved
  • ⅓ cup chopped red onion
  • ¼ cup sliced black or Kalamata olives
  • ½ cup crumbled feta cheese
  • 1 cup shredded mozzarella or Italian blend cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt & pepper to taste
  • Optional: fresh parsley or basil for garnish
  • Optional: a squeeze of lemon for brightness

🔥 Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Sauté zucchini (optional):
    For extra flavor and less moisture, lightly sauté zucchini in olive oil for 3–4 minutes. Set aside.
  3. Mix the bake:
    In a large bowl, combine cooked chicken, zucchini, cherry tomatoes, red onion, olives, garlic, olive oil, oregano, basil, salt, and pepper.
  4. Assemble:
    Pour the mixture into the baking dish. Top with feta and shredded mozzarella.
  5. Bake:
    Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
  6. Finish & serve:
    Garnish with fresh herbs and a squeeze of lemon if desired. Serve warm.

🌿 Tips:

  • Add spinach or artichoke hearts for more Mediterranean flavor.
  • Great for leftovers — even better the next day!
