2 medium zucchinis, sliced into rounds or half-moons
1 lb boneless chicken breast or thighs, cooked and shredded or cubed
1 cup cherry tomatoes, halved
⅓ cup chopped red onion
¼ cup sliced black or Kalamata olives
½ cup crumbled feta cheese
1 cup shredded mozzarella or Italian blend cheese
2 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
½ tsp dried basil
Salt & pepper to taste
Optional: fresh parsley or basil for garnish

🔥 Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Sauté zucchini (optional): For extra flavor and less moisture, lightly sauté zucchini in olive oil for 3–4 minutes. Set aside.
Mix the bake: In a large bowl, combine cooked chicken, zucchini, cherry tomatoes, red onion, olives, garlic, olive oil, oregano, basil, salt, and pepper.
Assemble: Pour the mixture into the baking dish. Top with feta and shredded mozzarella.
Bake: Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
Finish & serve: Garnish with fresh herbs and a squeeze of lemon if desired. Serve warm.
