🥣 Meaty Cabbage Soup

Ingredients

  • 1 lb ground beef
  • ½ head green cabbage, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14–15 oz)
  • 4 cups beef broth
  • Salt & pepper, to taste
  • Optional: 1–2 tsp paprika, 1 bay leaf, or a pinch of chili flakes for heat

🍳 Instructions

1. Brown the Beef

  • Heat a large pot over medium-high heat.
  • Add the ground beef and cook until browned, breaking it apart as it cooks.
  • Drain excess fat if needed.

2. Add Aromatics

  • Add the diced onion and minced garlic to the pot.
  • Cook 2–3 minutes until fragrant and softened.

3. Add Cabbage

  • Stir in the chopped cabbage.
  • Sauté for about 5 minutes until it starts to soften.

4. Add Tomatoes & Broth

  • Pour in the canned diced tomatoes (with juice).
  • Add the beef broth.
  • Season with salt, pepper, and any optional spices you like.

5. Simmer

  • Bring to a boil, then reduce heat to low.
  • Cover and simmer 25–30 minutes, or until cabbage is tender and flavors meld together.

6. Taste & Serve

  • Adjust seasoning as needed.
  • Serve hot. Great with bread, rice, or on its own!
