
Ingredients
For the Meatloaf (Serves 4–6)
- 1.5 lbs (680 g) lean ground beef (90% lean)
- ½ lb (225 g) ground turkey (optional, for extra protein and leaner mix)
- 1 egg
- ½ cup plain Greek yogurt (or milk, adds moisture and protein)
- ½ cup rolled oats or whole wheat breadcrumbs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ cup ketchup or tomato sauce (for topping)
For the Cheesy Garlic Bread
- 1 whole wheat baguette or loaf
- 3 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1 cup shredded mozzarella or cheddar cheese
- 1 tbsp fresh parsley, chopped (optional)
Instructions
1. Make the Meatloaf:
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease.
- In a large bowl, combine ground beef, ground turkey, egg, Greek yogurt, oats/breadcrumbs, onion, garlic, Worcestershire sauce, salt, pepper, and paprika. Mix gently until just combined.
- Shape mixture into a loaf and place in the prepared pan. Spread ketchup on top.
- Bake 45–55 minutes, or until internal temperature reaches 160°F (71°C).
2. Make the Cheesy Garlic Bread:
- While the meatloaf is baking, preheat oven to 375°F (190°C) if needed.
- Slice the baguette in half lengthwise. Mix softened butter with minced garlic and spread evenly on the bread.
- Sprinkle shredded cheese on top. Bake 10–12 minutes, or until the cheese is melted and bubbly. Optional: broil 1–2 minutes for a golden finish.
3. Serve:
- Slice the meatloaf and serve alongside warm cheesy garlic bread. Garnish with parsley.
