Meatloaf with Cheesy Garlic Bread (High-Protein)

Ingredients

For the Meatloaf (Serves 4–6)

  • 1.5 lbs (680 g) lean ground beef (90% lean)
  • ½ lb (225 g) ground turkey (optional, for extra protein and leaner mix)
  • 1 egg
  • ½ cup plain Greek yogurt (or milk, adds moisture and protein)
  • ½ cup rolled oats or whole wheat breadcrumbs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ cup ketchup or tomato sauce (for topping)

For the Cheesy Garlic Bread

  • 1 whole wheat baguette or loaf
  • 3 tbsp unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

1. Make the Meatloaf:

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease.
  2. In a large bowl, combine ground beef, ground turkey, egg, Greek yogurt, oats/breadcrumbs, onion, garlic, Worcestershire sauce, salt, pepper, and paprika. Mix gently until just combined.
  3. Shape mixture into a loaf and place in the prepared pan. Spread ketchup on top.
  4. Bake 45–55 minutes, or until internal temperature reaches 160°F (71°C).

2. Make the Cheesy Garlic Bread:

  1. While the meatloaf is baking, preheat oven to 375°F (190°C) if needed.
  2. Slice the baguette in half lengthwise. Mix softened butter with minced garlic and spread evenly on the bread.
  3. Sprinkle shredded cheese on top. Bake 10–12 minutes, or until the cheese is melted and bubbly. Optional: broil 1–2 minutes for a golden finish.

3. Serve:

  • Slice the meatloaf and serve alongside warm cheesy garlic bread. Garnish with parsley.

High-Protein Tips

  • Protein boost: Using Greek yogurt in the meatloaf adds ~5–6 g protein per serving.
  • Lean meats: Combining beef and turkey keeps it lean but still flavorful.
  • Extra cheese: For higher protein, add more shredded cheese to the garlic bread or sprinkle on top of meatloaf slices.
  • Optional sides: Serve with roasted vegetables or a side salad to balance the meal.
