MEAT AND CAULIFLOWER CASSEROLE

Ingredients:
- 1 medium head of cauliflower, cut into florets
- 1 lb (450g) ground beef or ground turkey
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, until tender. Drain and set aside.
- Cook Meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3 minutes. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Combine Ingredients: Add the drained diced tomatoes, oregano, basil, salt, and pepper to the meat mixture. Cook for another 5 minutes to let the flavors combine.
- Assemble Casserole: In a large mixing bowl, combine the cooked cauliflower, meat mixture, sour cream, and half of the shredded cheddar cheese. Mix well.
- Bake: Transfer the mixture to a greased baking dish. Sprinkle the remaining cheddar cheese and the grated Parmesan cheese on top.
- Bake: Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly, and the casserole is heated through.
- Garnish: If desired, sprinkle chopped fresh parsley on top before serving.
- Serve: Let the casserole cool for a few minutes before serving.
