๐Ÿ… Magic Tomato Salad

โœจ Why It’s “Magic”:

  • Uses basic ingredients, but tastes gourmet
  • Perfect as a side dish, light lunch, or part of a Mediterranean spread
  • Bursting with summer freshness and natural umami

๐Ÿ›’ Ingredients (Serves 4)

  • 4โ€“5 ripe tomatoes (heirloom, cherry, grape, or Roma โ€“ or a mix)
  • 1 small red onion (thinly sliced)
  • 1โ€“2 cloves garlic (minced or finely grated)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar or balsamic vinegar
  • 1 tsp honey or maple syrup (optional, to balance acidity)
  • Salt and black pepper to taste
  • ยฝ tsp dried oregano or Italian seasoning
  • Fresh basil leaves (a handful, torn)
  • Optional: crumbled feta or fresh mozzarella balls
  • Optional: sliced cucumbers or olives for variation

๐Ÿ‘จโ€๐Ÿณ Instructions

  1. Prep the Tomatoes:
Wash and slice tomatoes (if using cherry or grape tomatoes, cut them in half). Place in a large bowl.
  2. Add Aromatics:
Add sliced red onion and minced garlic to the tomatoes.
  3. Mix the Dressing:
In a small bowl, whisk together olive oil, vinegar, honey (if using), salt, pepper, and oregano.
  4. Combine:
Pour the dressing over the tomatoes and gently toss to coat. Let it sit for 10โ€“15 minutes at room temperature to allow flavors to meld.
  5. Finish:
Top with torn basil and optional cheese or add-ins. Taste and adjust salt or acidity if needed.

๐ŸŒฟ Serving Suggestions:

  • Serve with toasted baguette slices or crusty sourdough
  • Spoon over grilled chicken or fish
  • Add to cooked pasta for a quick tomato-basil pasta salad
  • Eat it on its own with a spoonโ€”itโ€™s that good!
