Low-Point Yummy Summer Pea Salad

Ingredients:

  • 2 cups fresh or frozen green peas (thawed if frozen)
  • 1/4 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup light mayonnaise
  • 1/4 cup plain non-fat Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. Prepare the Peas: If using frozen peas, thaw them by placing them in a colander and running them under cold water. Drain well.
  2. Mix Vegetables: In a large mixing bowl, combine the peas, red onion, celery, red bell pepper, and parsley.
  3. Prepare the Dressing: In a separate small bowl, whisk together the light mayonnaise, Greek yogurt, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper until well combined.
  4. Combine and Toss: Pour the dressing over the pea mixture and gently toss to coat all the ingredients evenly.
  5. Chill and Serve: Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Serve chilled.
