Main Soup
1 lb ground beef or ground turkey or shredded chicken
2 tbsp cream cheese
1 cup heavy cream
2 cups chicken broth (low sodium if preferred)
1 cup shredded Mexican cheese (cheddar/jack blend)
½ cup diced tomatoes with green chiles (Rotel style)
½ medium onion, diced
1 tbsp butter or olive oil
Mexican Seasoning
1 tsp chili powder
1 tsp cumin
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp oregano
Salt & pepper to taste
Optional: pinch cayenne or chipotle powder for heat
Optional Add-ins
¼ cup cream cheese extra for thicker soup
¼–½ cup cauliflower rice (still low carb)
Jalapeños, cilantro, lime, or sour cream for topping
🥣 Instructions
- Cook the Meat
Heat a pot over medium-high heat.
Add butter, then cook onion until soft (2–3 min).
Add ground beef/turkey and brown it.
Drain excess fat if needed.
- Add Seasonings
Stir in chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt & pepper.
Cook 1 minute to release the flavors.
- Add Broth and Tomatoes
Add chicken broth and diced tomatoes with green chiles.
Bring to a gentle simmer.
- Stir in the Cheesy Base
Reduce heat to low and add:
Cream cheese
Heavy cream
Shredded Mexican cheese
Stir continuously until melted and smooth.
Do NOT boil after adding cheese — it may separate.
- Adjust Thickness
For thicker soup: simmer 3–5 minutes on low.
For thinner: add a splash of broth or cream.
- Serve
