Low Carb Keto white chicken enchiladas

Ingredients:

For the Enchiladas:

  • 2 cups cooked chicken, shredded (use rotisserie chicken for ease)
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1/2 cup cream cheese
  • 1/2 cup chopped green chilies (canned, mild or hot, depending on your preference)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 large low-carb tortillas (store-bought or homemade; make sure they are low-carb)

For the White Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a large bowl, mix the shredded chicken, 1 cup mozzarella cheese, sour cream, cream cheese, green chilies, chopped onion, minced garlic, cumin, paprika, salt, and pepper until well combined.
  3. Prepare the White Sauce:
    • In a medium saucepan, combine the heavy cream and chicken broth over medium heat.
    • Whisk until the mixture is warm and begins to simmer.
    • Gradually add the shredded Monterey Jack cheese, whisking continuously until the cheese is melted and the sauce is smooth.
    • Stir in garlic powder, onion powder, salt, and pepper. Adjust seasoning to taste.
  4. Assemble the Enchiladas:
    • Lightly grease a baking dish (9×13 inches works well).
    • Spread a thin layer of the white sauce on the bottom of the baking dish.
    • Place a generous portion of the chicken filling in the center of each tortilla, then roll them up and place seam-side down in the baking dish.
    • Once all tortillas are in the dish, pour the remaining white sauce evenly over the top.
  5. Bake:
    • Sprinkle additional shredded cheese on top, if desired.
    • Bake in the preheated oven for 25-30 minutes, or until the cheese on top is melted and bubbly, and the edges of the tortillas are slightly crispy.
  6. Serve:
    • Let the enchiladas cool for a few minutes before serving.
    • Garnish with fresh cilantro, sliced jalapeños, or avocado slices if desired.
