Low Carb Air Fried Onion Rings

Ingredients:

  • 1 large sweet onion
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese (optional)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray or oil for the air fryer basket

Instructions:

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for 5 minutes.
  2. Prepare the Onion: Slice the onion into rings and separate them. You can make them as thick or as thin as you prefer.
  3. Prepare the Coating: In a shallow bowl, combine the almond flour, Parmesan cheese (if using), paprika, garlic powder, salt, and black pepper. Mix well to combine.
  4. Whisk the Eggs: In another shallow bowl, beat the two eggs.
  5. Coat the Onion Rings: Dip each onion ring into the beaten eggs, allowing any excess to drip off, and then coat it with the almond flour mixture. Make sure the onion ring is well coated. You can double-dip them for a thicker coating if desired.
  6. Arrange in the Air Fryer: Lightly grease the air fryer basket or tray with cooking spray or a small amount of oil. Place the coated onion rings in a single layer in the air fryer basket. Make sure they are not touching and have some space between them.
  7. Air Fry: Air fry the onion rings at 375°F (190°C) for about 10-12 minutes, flipping them halfway through the cooking time. The cooking time may vary based on the thickness of your onion rings, so keep an eye on them to avoid burning. They should be golden brown and crispy when done.
  8. Serve: Once the onion rings are cooked to your desired crispiness, remove them from the air fryer and serve immediately with your favorite low-carb dipping sauce, such as a sugar-free ketchup or a ranch dressing made with Greek yogurt.
