Ingredients

For the Meatloaf Layer:

  • 1.5 lbs ground beef (choose 90–96% lean for higher protein, lower fat)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • Β½ cup breadcrumbs
  • 2 eggs (adds protein + binding)
  • 2 tbsp Worcestershire sauce
  • Β½ cup milk or Greek yogurt (Greek yogurt gives more protein)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • Optional: Β½ scoop unflavored protein powder to increase protein without altering texture

For the Loaded Potato Topping:

  • 3–4 large potatoes, peeled & chopped
  • Β½ cup Greek yogurt (protein boost + replaces sour cream)
  • Β½ cup shredded cheddar (or use reduced-fat for lower calories)
  • 2 tbsp butter
  • Salt + pepper to taste
  • Optional toppings:
    • Crumbled turkey bacon or lean beef bacon
    • Green onions
    • More cheese
    • Protein powder (Β½ scoop unflavored) β€” optional but works in mashed potatoes!

🍽️ Instructions

1. Prep Potatoes

  1. Place potatoes in a pot with salted water.
  2. Boil until fork-tender (10–15 minutes).
  3. Drain and mash with:
    • Butter
    • Greek yogurt
    • Salt & pepper
    • Cheddar
  4. (Optional) Add Β½ scoop unflavored protein powder and mix well.

2. Make the Meatloaf Layer

  1. Preheat oven to 375Β°F (190Β°C).
  2. In a large bowl combine:
    • Ground beef
    • Onion
    • Garlic
    • Breadcrumbs
    • Eggs
    • Worcestershire
    • Milk/Greek yogurt
    • Seasonings
  3. Mix until fully combinedβ€”don’t overmix or the meatloaf gets dense.
  4. Press the meat mixture into a greased baking dish (9Γ—13 recommended).

3. Bake

  • Bake the meatloaf layer 25 minutes, uncovered.

4. Add the Potato Layer

  1. Remove from oven.
  2. Spread the mashed potato mixture evenly over the meatloaf.
  3. Top with extra shredded cheese and bacon pieces if using.

5. Final Bake

  • Return to oven and bake for 15–20 minutes, until cheese melts and bubbles.

Option: Broil the top for 2–3 minutes for a golden crust.
